Chicken black bean garlic sauce

Steps:
1. Cut the chicken. Marinade with oyster sauce, sesame oil, potato starch/tapioca/flour, shaoxing wine (optional).
2. Fry the chicken, set aside.
3. The sauce: fry onions, paprika, chillipepper (optional), butter (optional). Add black bean garlic sauce, black beans, water to the sauce. Thicken with potato starch/maizena if necessary.

Presentation:
serve with rice. Garnish with spring onions and red chilli peppers. Season with (Sichuan)pepper.
