Thai/Madras-curry with meatballs and tofu (kari bakso tahu)

This is a standard Thai curry, with extra Madras curry to add flavour. In the Netherlands, (Madras)curry powder is widely available in every supermarket, the yellow color is due to turmeric.

Steps:
1. Stir fry garlic, onions/shallots, Thai green curry pasta, lemon leaves, lemongrass, madras-curry powder, fishstock powder. Add coconut milk, fish sauce, lemon juice, water (optional), sugar (optional).
2. Stir fry the meatballs, fishballs and tofu.

Presentation: serve with soen/vermicelli/rice/noodle, lemon slice, fried onions (bawang goreng), boiled egg (optional).

Variation: 
  • use Laksa spice mix instead of Thai curry. 
  • You can add chicken/fish/shrimp to the Thai curry. 
  • Add couscous instead of soen/noodle, let the couscous to rise absorbing the curry.
