Roasted Lamb ribs


Steps:
1. Apply mix of olive oil, salt, pepper, garlic powder to the meat using a brush.
2. Dip the meat with beaten/whisked egg.
3. Mix bread crumbs, rosemary/thyme, chopped macadamia nuts (kemiri). Coat the meat with this mix.
4. Oven/air fryer 100C (not too hot to keep the juice) 25-35min then increase to 200C (to brown) 5min.
5. Remove the heat. Wrap the meat with aluminum foil 5-10min to keep the moisture.

Note: this recipe was originally for lamb rack, but I substituted it with lamb ribs instead to save cost.
