Pho (Vietnamese noodle soup)

1. Make a Pho bouquet garni: mix pho spices (e.g. cinamon, cardamon, nutmeg, staranise,coriander, fennelseed, cloves), you can also buy an already mixed spices in Asian store. Stir fry the spices in a wok. Put the mix in a cloth sachet or a tea-strainer.
2. Stir fry garlic, onions, ginger.
3. Stir fry the meat (lamb ribs / meat balls / beef/ veal porkbelly / chicken / shrimps) to bruin them.
4. Make the broth: cook water with bone marrow, sugar & stock cubes. Add the pho spices mix and garlic-onion-ginger in this soup. Cook with small heat.
5. Add vegetables (e.g. cai sim / pak choi / choy sum, cabbage, carrot, broccoli, spring onions, bean sprout, mushroom) in the soup.
6. Cook kwetiau/noddle with water. Mix (sesame) oil to the noodle. Add the noodle to the soup.
7. Garnish with Thai basil leaves, chilli paper.

Presentation: serve with lemon, fish sauce, hoisin sauce, chili sauce (e.g. sriracha).

Note: bouquet garni is a sachet of mix spices that can be bought in (super)market in France & Belgium. Since Vietnamese food is also popular in France/Europe, sometimes you can get Pho bouquet garni mix spices in Asian stores.
