Steps:
1. Marinade (overnight) chicken fillet with oyster sauce, hoisin sauce, chili-garlic sauce, shaoxing wine, sesame oil.
2. Stir fry garlic.
3. Add the chicken.
4. Add paprika, celery stalk, water (if needed).
5. Add cashew nuts and Sichuan peppercorns.

Presentation: serve with rice, garnish with spring onions.
