Steps:
1. Marinade (10-30min) the fish with lemon juice and salt.
2. Cover the fish with kentucky powder & breadcrumbs (or dip the fish in beaten eggs then a mix of flour, tapioca, breadcrumbs, stockpowder, salt, pepper) . Shallow fry the fish until brown.
3. The sweet-sour sauce: fry garlic, onions, shallots, ginger, chilli pepper, lemongrass. Add soybean sauce (taoco). Add water, sugar. oyster sauce/fish sauce (optional), tomatoes.
Presentation: lay the fish on the sauce. Serve with rice.

Notes:
Variation: use tofu instead of fish.

Notes:
- You can see the Chinese influence (soybean sauce) mixed with Indonesian/Indochina influence (lemongrass, shallots). Kentucky powder, which is very popular in Indonesia, is a reverse engineering version of KFC recipes.
- The popular recipe in Indonesia is to use Gourami fish, but it’s not easy to find Gourami here in Europe so I use (Mediteranian) Tilapia instead. You can also use Snappers (kakap) which are easier to find in Europe.
Variation: use tofu instead of fish.
